Harus diakui Jakarta telah kehilangan salah satu ikonnya, yaitu huruf M raksasa di Thamrin, yang saat ini ditutupi kain hitam dan digantikan dengan lambang bajak laut bernama Toni Jack’s dengan pakaian hijau-orange. Tidak hanya di Sarinah, tapi Ronald saat ini memang sudah digusur dari semua restoran McDonald’s yang lisensinya sempat dimiliki Bambang Rachmadi. Toni menyapa orang-orang dengan ‘paket marah’ dan slogan ‘better than that one’—tentunya kita tahu siapa yang dimaksud dengan ‘that one’ itu.

Toni tahu bahwa sebagai bajak laut, ia tidak bisa diam saja, meski diuntungkan dengan beberapa lokasi ‘kapalnya’ yang strategis. Toni lalu berusaha mendekati masyarakat Indonesia melalui strategi kultural, yaitu mengaitkan batik, yang sedang menjadi topik hangat, terlebih setelah tanggal 2 Oktober itu. “Gratis eskrim setiap hari Jumat bagi anda yang memakai batik,” kata Toni.

Mungkin memang harus menunggu beberapa waktu untuk melihat apakah Toni akan mendapatkan banyak harta karun dari kebaikan hatinya itu, tetapi jika Toni sempat bertemu dengan Kolonel Sanders pada tahun 1987, ia pasti bisa mendengar kisah sang kolonel yang murah senyum itu mengenai bagaimana KFC, sebuah simbol barat bisa begitu dicintai di Cina, negara yang awalnya memiliki kebijakan yang sangat bertentangan dengan negara asal KFC.

Rumah pertama Sanders di China terletak dekat dengan lapangan Tiananmen, yang juga lokasi ikonik di China—dua tahun kemudian, tepatnya tahun 1989, lapangan Tiananmen menjadi saksi sejarah revolusi berdarah di China. Pada dua dekade kemudian, KFC mendirikan rumah-rumah yang lain di seluruh China sehingga mencapai angka 2500 outlet di 280 kota, sebuah angka yang disebut-sebut sebagai fenomenal—bahkan tahun lalu saja sales tahunannya mencapai $2 triliun. Jumlah rumah Sanders ini jauh melebihi jumlah rumah Ronald—hanya sekitar 800, termasuk diatas local chain yang juga berkembang di China, seperti Zhen Gongfu, atau Ajisen Ramen yang berasal dari Jepang. Namun dengan pertumbuhan outlet baru yaitu rata-rata 300 pertahun, hampir bisa dipastikan KFC akan sulit terkejar, bahkan mungkin bisa melebihi rumah Sanders di kampungnya, Amerika Serikat. Popularitas ini, bahkan membuat KFC sering disebut sebagai Kentucky Fried China.

Kesuksesan ini, menurut Warren Liu, penulis buku “KFC In China: Secret Recipe for Success”, adalah berkat dari kekuatan konteks, orang-orang, strategi dan eksekusi. “China adalah pasar yang sukar karena keberagaman dan kerumitan budayanya, faktor geografinya, dan lingkungan bisnis yang berubah terus menerus,” tulis Liu.

Pada lingkungan seperti ini menurut Liu, yang menjadi keuntungan kompetitif KFC adalah kecepatan dalam hal memutuskan dan mengeksekusi strategi penetrasi pasar. Hal ini dimungkinkan karena sebagian besar pimpinan awal KFC adalah mereka yang kemudian dikenal sebagai “Taiwan Gang”. “Mereka memiliki pengalaman berpuluh-puluh tahun di industri makanan siap saji,” jelas Liu. Yang juga penting, kata Liu, meski banyak yang berlatar belakang pendidikan dari barat, mereka adalah orang-orang yang juga beretnis China, dan secara alamiah mengerti karakter pasar yang mereka hadapi, dan mempermudah proses consumer insight. “Pemahaman ini membawa keputusan intuitif yang menghemat banyak waktu,” tambah Liu.

Intuisi ini kemudian melahirkan product localisation, yang juga bagian penting dari kesuksesan KFC di negara dengan penduduk terbanyak di dunia itu. Dengan daging ayam sebagai core product, KFC juga diuntungkan karena sebagian besar penduduk China memang mengkonsumsi ayam, selain daging babi yang juga disukai. “Ini adalah keuntungan alami KFC dibandingkan McDonald’s,” tambah Liu.

Selain menu original KFC yang juga diterima oleh konsumen, KFC juga memenuhi selera lokal dengan menyediakan menu seperti congee atau bubur ayam khas China untuk sarapan, Beijing Chicken Roll ala Bebek Peking yang terkenal, disajikan dengan saus seafood, dan Spicy Diced Chicken yang menyerupai hidangan ala Sichuan. Selain akar lotus, inovasi terbaru KFC adalah Youtiao, sejenis donat khas China yang selalu ada dalam menu sarapan mereka.

KFC di China berada dalam pengelolaan parents company YUM! Brands bersama dengan Pizza Hut dan Pizza Hut Express. Meski KFC di China terhitung sebagai bintang dengan kontribusi lebih dari 20% terhadap global revenue dari YUM! Brands, perusahaan yang berpusat di Louisville Amerika Serikat ini terhitung sangat agresif dengan tetap meluncurkan chain baru termasuk restoran tradisional China, East Dawning. “Saya rasa mereka ingin menutup segala kemungkinan lahirnya kompetitor lokal yang potensial, dan East Dawning adalah senjata mereka,” tulis Liu.

Meski demikian, menurut Liu, KFC jangan terlalu ekspansif dan jor-joran dalam mengenalkan produk-produk baru, namun harus menjaga kualitas, rasa dan strategi harga. “Yang juga penting adalah regenerasi dari Taiwan Gang kepada orang-orang China itu sendiri, bukan dengan alasan altruistik tapi karena orang-orang lokal akan jauh lebih mengerti karakteristik market,” kata Liu yang juga merupakan pria di belakang kesuksesan KFC di China ini.

Senada dengan Liu, Sam Su yang mengepalai YUM! Brands China mengatakan bahwa di negara seperti China, setiap perusahaan harus mencoba model baru. “Kami bahkan menyediakan menu yang serupa dengan makanan-makanan yang bisa diperoleh orang-orang China dari warung-warung pinggir jalan ketika mereka pulang bekerja,” jelas Su sebagaimana dikutip dari sebuah situs.

Situs itu juga menyebutkan bahwa preferensi orang China terhadap KFC jarang sekali pada menu ayam gorengnya, sebagaimana diakui oleh He Qi, seorang pria yang mengunjungi KFC tiga sampai empat kali seminggu untuk makan ikan, bubur, dan egg tarts.

Menurut Lucy Wu, Deputy Head Asosiasi Franchise dan Chain Store China, kesuksesan KFC di China memang karena strategi lokalisasinya. Hal ini bahkan membuat model bisnis KFC di China akan diadaptasi di Amerika sebagaimana dituturkan oleh David Novak, petinggi YUM!. Novak berencana akan meningkatkan menu sarapan, penjualan sore hari, dan lebih banyak pilihan untuk minuman dan makanan penutup.

Mungkin tampak sederhana, tapi pengenalan terhadap selera lokal memang sangat krusial jika produk lahir dari kultur non lokal.
